BACK from the dead...


This week I have hosted two fairly big events and had to clean like crazy and bake/cook for both.

Tuesday my visting teaching partner and I hosted our annual Luncheon. We figure it's an easy way to kill a ton of birds with one stone. We get to eat, have a playdate, visit teach, and chat with girlfriends all at once. How fun is that??

Funny story about this luncheon though...

Joy, my VT partner, insisted that I make the Southwest Eggrolls I put in the ward cookbood. They sounded so good and she really really wanted to try them. Great, right??

YEAH, except for the fact that I have never made them!! Really, who puts a recipe they have never tried in the ward cookbook? Hmmm.... that would be me.

I spotted this recipe on The Mommy Times and thought it looked so good. Since I was already in the middle of emailing my recipes for the cookbook I thought I would just slip this one in there too. That way I didn't have to write it out and put it in my file, I figured I'd just let someone else do the work for me. Hey, I'm just trying to use my time efficiently!!

Well, since I'm too embarrased to admit that I have never made the recipe I graciously accept her request to create my masterpiece.

All week I had planned to make the eggrolls for dinner to do a test run, and any possible tweaking that may have been needed. Well, Monday rolls around and I have yet to try my famous recipe. So at 8:30 pm I whip up a batch and Jeremy and I try my creation.

DIVINE!!!


Uhhh... let's just say that was a Tender Mercy, if you catch my drift.


Today, I hosted a baby shower with a full on brunch for at least 20 ladies. Call me crazy. No, I'm serious, go ahead and tell me now.

I'm lucky I pulled it all together with the quiches, mini muffins, fruit trays, homemade cream puffs, and juices I offered to contribute. Seriously, I bite off WAY more than I can chew TOO often. But it all manages to come together in the end.

There are blessings in being willing, because in the end everything seems to come together.

Anyway, I'm pleased to say it is all over and I'm free to check blogs again. Thanks for your patience!

I love the idea of an annual luncheon. The eggrolls sound delish, and I'm glad everything came together for the shower too. We missed you at Eden's. Can't wait to try those eggrolls...hint, hint...

Okay... I'll say it... you're crazy... but, it also sounds like you're a really great friend. So, the crazy kinda evens out ;) It all sounds yummy! And I found the recipe for the eggrolls... we are gonna have to try them!

Maybe I'll call you next time I need a caterer; although the distance could be a problem.
