The Biggest Cover-up

Does anyone know why we grow zucchini and then try and hide in any possible recipe?

Why don't we have any recipes that celebrate and bring out the flavor in the zuc? Is it because it doesn't have any distinct flavor?

I'm just curious since I have at least 13 bags of this veggie peeled, shredded and measured into 2 cup portions, hogging the precious space in our freezer. Does anyone acutally have a good recipe that uses zucchini without trying to hide it in a chocolate cake or something??

Nope. All of my zucchini is hidden. The way I like it best is fried... there is a mix at WalMart that a friend bought one time to do onion rings. We dunked some zucchini in the batter and fried it up. It was gooooooood!!! Not at all healthy, but very tasty!

Zucchini is hidden because it does nto have a very distinct flavor...but that being said, it is still good for a side dish!

I sauteed some last night in a bit of olive oil and then I sprinkled it with Johnny's Garlic Spread Seasonings and it was DELISH. I'm going to do it again tonight but use Pam instead of OO to cut down on the calories.

I'm in the same boat though, because my garden is kicking out zuc's faster than I can pick them!

Wow, I wish I had a garden. I'd loooooove to be overwhelmed with veggies. Poor us we have notta! I steam veggies or I smother them with onions.

stuffed zucchinies are the best. my mom has a killer recipe...but of course you need a HUGE zuci and not shredded frozen ones! :p

sauted with onions, squash, oil, garlic, and other seasoning is delicious as well!

Oh this summer I have been eating my zucchini like crazy. I like to cut it and put it on my grill with a little bit of olive oil and seasoning salt. When it is grilled to perfection I sprinkle parmesean cheese over it. Yummmmy! I have a recipe for a chocolate zuchinni cake that is really yummy, it is my kids favorite cake. Rich sinful chocolate cake.... I think I might go look out in my garden right now......

Zucchini bread or muffins is my favorite. My mom just used her banana bread recipe and substituted zucchini for the banana. Delish!

I love Zucchini bread! It's so yummy. We didn't plant any this year, but my pumpkins??? Yeah, they are overtaking the entire garden! Good luck with the recipes!

Zuchinni latkes-I think you can still taste the flavor of the zucchinni but now it's fried into a pancake-mmmmmm fried!

I love zucs! I love to just broil them with olive oil and lemon and salt and pepper, or steamed with a sprinkling of Lowry's. Also I have a couple recipes, a veggie chili and zucchini lasagna. You do kind of really need to like your veggies for the lasagna though. Let me know if you want them.
